Carolina Zubiate is a Peruvian chef whose cuisine is rooted in memory, culture, and the connections that food creates. She was born and raised in Peru, where her grandfather cooked for her every day until she was 13 years old. Those meals became the foundation of her love for cooking and continue to inspire her work today.

After moving to the United States as a teenager, Carolina began her culinary career in the Washington, D.C. area before relocating to Denver more than ten years ago. Since then, she has spent her career learning from talented chefs while developing her own voice through pop-ups, collaborative dinners, and experiences that celebrate Peruvian cuisine through the lens of Colorado's seasonal ingredients.

Carolina currently serves as the Culinary Director at Bruto, where she continues to explore the intersection of tradition, innovation, and storytelling through food. Every dish reflects the people, places, and experiences that have shaped her journey—from the flavors of her childhood in Peru to the ingredients and community she now calls home.
